Bistecca & Bones Italian Chophouse Is Coming to High Street at CityNorth in Spring 2027

North Phoenix diners gain a Florentine chophouse from a proven local restaurant group — arriving at High Street in spring of next year.

The short version

  • The main dining room covers approximately 7,500 sq ft with a large bar and extensive wine collection.
  • Bistecca & Bones opens at High Street at City North, near 56th St and Deer Valley Dr, spring 2027.
  • Signature dish: a 40-oz Bistecca Fiorentina porterhouse, served flaming and sliced tableside.
  • A 2nd Valley location is planned at The Sydney, a $100M development near 90th St and Loop 101.
  • Square One Concepts also owns Bourbon & Bones, open in Scottsdale since 2016.

Square One Concepts — the Phoenix group behind Bourbon & Bones — plans to open Bistecca & Bones Italian Chophouse at High Street at City North in spring 2027. The Florentine-style chophouse will sit near 56th Street and Deer Valley Drive, north of Loop 101, and bring a 40-ounce flaming porterhouse and a roughly 7,500-square-foot dining room to the north Phoenix corridor.

If you live near CityNorth, this is the dining shift worth watching

High Street already anchors the walkable core of CityNorth, a roughly 100.3-acre mixed-use development that runs along Loop 101 from 56th Street toward Desert Ridge Marketplace. Adding a full-scale Italian chophouse of this size changes the neighborhood’s draw — not just for a quick weeknight dinner, but for the kind of special-occasion meal residents now drive to Scottsdale or Downtown to find.

That matters if you own or rent nearby. Fine-dining anchors at mixed-use nodes tend to pull retail neighbors and lift foot traffic for the whole corridor. A 7,500-square-foot dining room with a wine program and a bar is not a fast-casual placeholder — it signals that the operator expects sustained demand from the surrounding submarket.

If you work in north Phoenix, it also means a serious lunch and dinner option closer to the office. And it means jobs: a restaurant at this scale requires a large front-of-house and kitchen staff from day one.

What is Bistecca & Bones? The Florentine chophouse concept explained

The concept draws directly from Italian and Tuscan dining traditions, according to Square One Concepts founder and CEO S. Barrett Rinzler. The name spells out the menu logic: bistecca is the steak, bones are the butcher cuts.

The centerpiece is the Bistecca Fiorentina — a 40-ounce porterhouse brought to the table on fire and sliced tableside. That is the theatrical anchor. But the menu reaches beyond beef. The restaurant will display fresh fish and shellfish so guests can see the catch before they order, a practice borrowed from classic European seafood houses. Caesar salads will also be prepared tableside.

The dining room is the space where it all happens: approximately 7,500 square feet, with an extensive wine collection and a large bar. That square footage covers the main room alone — it is a serious physical footprint for a single dining floor.

Where it is opening: High Street at CityNorth and what that address means

The address puts Bistecca & Bones inside High Street, the retail and restaurant street within CityNorth. CityNorth spans roughly 100.3 acres along Loop 101, running between 56th Street and Desert Ridge Marketplace. Freeway access is direct. Parking is part of the mixed-use layout. For residents of the Desert Ridge, Tatum Ranch, and north Scottsdale border neighborhoods, this is a five-to-ten-minute drive with no freeway required.

It also places the restaurant in a node that is actively adding dining options, which reinforces High Street’s position as a destination rather than a pass-through. If you are tracking new restaurant openings in the Valley’s fine-dining scene, this is one of the bigger announcements for north Phoenix in recent memory.

The team behind it: Square One Concepts and the Bourbon & Bones track record

Square One Concepts is not new to the Valley. The company launched Bourbon & Bones Chophouse and Bar in Old Town Scottsdale in 2016. It expanded to Gilbert’s SanTan Village in 2021. A third Bourbon & Bones opened at Peoria’s 83 Marketplace in May 2023. That is a consistent expansion pace across different Valley submarkets over seven years.

Bistecca & Bones is a separate concept — same operator, different DNA. Where Bourbon & Bones leans American chophouse, Bistecca & Bones is built around Florentine and Tuscan tradition. Rinzler leads both.

A second location already planned: Bistecca & Bones at The Sydney

Square One Concepts is not stopping at CityNorth. A second Bistecca & Bones is planned at The Sydney, a $100 million, 26-acre retail and entertainment development on Salt River Pima-Maricopa Indian Community land near 90th Street and Loop 101.

That building is designed as a roughly 6,800-square-foot, two-story structure. Bistecca & Bones takes the ground floor. The upper floor is set to house a second location of Old Town Ski Lodge, with converted gondolas and an ice bar built inside a walk-in freezer.

Square One expects to get access to its Sydney space in summer 2027. Both Bistecca & Bones and Old Town Ski Lodge are expected to open there by late 2027 or early 2028.

Spring 2027 target and what comes before it

The High Street location is targeting spring 2027. No exact opening date has been announced. The Sydney location follows later — access in summer 2027, opening by late 2027 or early 2028 at the projected pace.

That gives the CityNorth location a roughly six-to-twelve-month head start on the second site. If you want to be first through the door, High Street is where to watch. Keep an eye on Square One Concepts for updates as buildout begins.

North Phoenix is drawing a lot of development attention right now — from TSMC’s campus bringing thousands of workers to the area to new housing tracts filling in around it. A restaurant of this scale fits the pattern: the rooftops are there, and the demand is following.
